A chamber ribbon-cutting will take place at 11 a.m. “You have a lot of city workers and they don’t have time to sit for 45 minutes, and I hope to fill that void with a good, wholesome quick service downtown.”īiagas will continue catering, but plans to offer prepared meals and meal deals on game nights in the fall.īiagas joined the Pflugerville Chamber of Commerce in April. “I’d like to provide something that is fresh and tasteful without all the hoopla,” Biagas said. These have been the only ways for people to get our items.”īiagas said she hopes to be able to provide that small, but quick service establishment that is missing from downtown Pflugerville. “For the past four years we’ve been selling our pastries to Dazzle Coffee. “We’ve been working out of a commercial kitchen and we can cater for an intimate meal for five people up to an event of 200 people,” Biagas said. “I leased a 500-square-foot space from a Quizno’s, but unfortunately they closed down and we lost our lease,” Biagas said.Īfter the site closed Biagas was able to continue managing her business through catering services. She would sell her items in downtown Pflugerville at the farmers markets next to First United Methodist Church.īiagas’ first brick-and-mortar site was located in Austin and was open from August 2011 to April 2013. Biagas said she was able to hone her skills because part of her duty was to bake desserts and bread for the company.īiagas founded Lil’ Mama’s Delicious Desserts in May 2008. “I knew I was going to be a working student and ACC was so affordable.”īiagas received the opportunity to continue baking when she participated in a student-run catering company. “I always wanted to go to culinary school,” Biagas said. She had planned to attend Texas Culinary School, but attended Austin Community College’s culinary program. In 2010 Biagas was able to combine those foods into a brownie-bottom cheesecake and plans on offering it on her menu.īiagas moved from Randolph, Mass. Dazzle Coffee's menu of hot beverages, cold beverages, and extras. “I’d wonder how they’d get the cheesecake to bake so high and taste so good, and brownies are so versatile they became my obsession.” “I’d always go to restaurants as a kid and I found myself fascinated with cheesecake and brownies,” Biagas said. “The concept is that every day we will prepare items and put them in the pastry case so people can come in and out under 10 minutes.”īiagas said she first became interested in food when she was 12 years old. “We will have grab-and-go sandwiches, soups, salads and desserts,” Biagas said. The concept for the new site is a grab-and-go café. Lil’ Mama’s is expected to reopen at 104 N. “We have the key and are already painting and starting to transform the space,” Biagas said. Owner Heather Biagas announced Lil’ Mama’s new location during a Pflugerville Chamber of Commerce luncheon. Lil Mama’s Delicious Desserts ‘n More is set to reopen in early July after closing its previous location in April 2013.
